Ingredients
Serves 4
750ml Chicken Stock
1/2 Small Cabbage (I used Red Cabbage)
500g Beetroot (peeled and roughly chopped)
1 Small Fennel Bulb (trimmed and roughly chopped)
1 Large Clove Garlic (Russian)
2 Teaspoons Fresh Ginger (peeled and roughly chopped)
1/2 Teaspoon Lemon Juice
Salt and Pepper to Taste
I put all ingredients into the soup maker and used setting 2. If you wish to make it using more traditional methods then you can follow the weight watchers recipe above. Verdict: Delicious.
